Here’s a little treat for your weekend: my favorite chocolate mug cake.

I’ve tried a few mug cake recipes recently and been largely unimpressed.

But now I’ve found it. Yum. I’m not gonna lie, I made this four nights in a row. The serving is small, but don’t be fooled: it’s very rich.  And I like to tell myself that because it’s so tiny it’s practically good for me. I tested the recipe on my mom, and she approves!

You can take this basic recipe and tweak it to your dietary needs/preferences like I did.

Without further ado . . .

Julie’s Favorite Chocolate Mug Cake

2 Tbsp flour (I use half white/half whole wheat flour)
1 Tbsp sugar
2 tsp cocoa powder
1/4 tsp baking powder
pinch salt
2 Tbsp almond milk
1 tbsp veg oil
semi-sweet chocolate chips
your choice of filling (peanut butter, almond butter, Nutella, jam, etc)

Combine dry ingredients in a small, microwave-safe mug
Mix in milk and oil until smooth, scrape around edges of mug to mix in pockets of flour
Stir in a small handful chocolate chips
Add 1 Tbsp filling (I like almond butter!), drop on top of batter and push down to submerge
Microwave on high for 1 minute (even if it doesn’t look done it will continue to set)
Let sit one minute to set, then enjoy!!!!
